New eatery already giving back to community

Jimboy’s Tacos recently opened its first Orange County restaurant in Aliso Viejo.
The quick-service taco eatery, known for its grilled Parmesan crusted shell, is nestled in the former Jack in the Box site at 27882 Aliso Creek Road.Founded in a camper trailer in 1954 at Kings Beach in North Lake Tahoe, the restaurant is a staple up north and operates about 40 locations, most within in the Sacramento region.

Jimboy’s menu includes an array of tacos, burritos, nachos, vegetarian dishes, salads, burgers and options for carnitas, shredded beef, steak and chicken. The eatery also serves breakfast.

Even though Jimboy’s Tacos is new to town, franchise operator Michael Freeman has already used his restaurant as vehicle to give back to the community. On October 10, Jimboy’s Tacos hosted the “Aliso Viejo love’s Aeverie” fundraiser.

The community came together to support and raise funds for Aeverie’s peanut-sniffing service dog.  Little Aeverie has a life-threatening food anaphylaxis allergy to 65 percent of foods. She also has muscular myopathy and EDS, a connective tissue disease. The service dog will help her in many ways, including protecting her from potentially going into anaphylaxis, losing her balance and with mobility, anxiety and stress.

Jimboy’s Tacos donated 25 percent of sales that day to the cause.
